Old fashioned Oatmeal cake
1 cup old fashioned rolled oats
1 1/2 cup boiling water
1 1/3 cups flour
1 tsp. baking soda
1 tsp cinnamon
1/2 tsp salt
1/2 tsp. nutmeg
1/2 butter
1 cup sugar
1 cup brown sugar
2 large eggs
1 tsp. vanilla
Combine oatmeal and water and let stand 20 minutes. In the meantime, in a medium bowl add butter and both sugars and beat on high til light and fluffy, about 5 minutes. Then beat in the eggs and the vanilla.
On slow speed beat in the oats then the flour. Pour into a greased 9x13 pan. Bake in a preheated 350 degree oven for 30 minutes. Remove from oven and let cool for 5 minutes then spread on topping.
Topping:
1 1/3 cup brown sugar
6 tbsp butter
6 tbsp heavy cream
1 cup shredded coconut
1/2 cup chopped nuts
Mix all and spread on warm cake. Then place cake under the broiler until topping is bubbly. Remove from oven. Serve warm.
