Canton, Ohio

Pops and I are in the Canton area today. We had a delivery near by and then came here for a repair to an antenna for our main computer.
Canton is the home of the Headquarters and only offices of Fedex Custom Critical. It is also the home to the National Football Hall of Fame.
A very popular local recipe is white chicken chili.
White Chicken Chili

1 tablespoon vegetable oil
1 large onion, chopped
1/2 tsp. garlic powder
1 lb boneless skinless chicken breasts, cut into bite-size pieces
1 qt. chicken broth
2 cans (15 oz each) cannellini beans, drained
1 jar green salsa
1 teaspoon dried oregano leaves
1/2 teaspoon ground cumin
Dash ground red pepper (cayenne), if desired
8 oz. shredded Monterey Jack cheese
Chopped fresh cilantro, if desired

In 4-quart saucepan or Dutch oven, heat oil over medium-high heat until hot. Add onion, garlic and chicken; cook and stir until chicken is no longer pink.

Stir in remaining ingredients except cheese and cilantro. Heat to boiling. Reduce heat to low; simmer 10 to 15 minutes to blend flavors, stirring occasionally.

To serve, spoon chili into soup bowls. Top each serving with cheese and cilantro

If you have trouble finding the green salsa just ask for it, most stores carry it now. The soup is really good. I have made it and it doesn't take long either.
