Pickled Eggs
1 dozen eggs hard boiled and peeled
2 cans of sliced beets
1 onion, sliced
1 cup sugar
1 cup water
1/2 cup vinegar
Pinch of salt
2 tablespoons pickling spice
Put everything but eggs into large pot and bring to a boil. Stir to dissolve sugar. Remove from heat.
Add to eggs making sure all eggs are covered completely.
Refrigerate 72 hours before using.
